Our ONE year Anniversary!

Happy 1 year to my hubby and I! We have been through so much in one year of marriage! We both got new jobs and changed positions within those jobs twice, we bought a house and started renovating it, and I started grad school. This has been a wonderful jounrey. I am so blessed to have found my soul mate to share this life with. He is my everything.

Derek sent me these beautiful flowers to my work on our one year anniversary. We also celebrated by going to Vahalla Vineyards and out to dinner at Billy's Ritz... a wonderful dining experience in downtown Roanoke.

Homemade Zucchini Bread

 

Zucchini Bread

 

2 c. sugar

3 eggs

1/4 c. vegetable oil

3/4 c applesauce

2 1/2 c. all purpose flour

1/2 c. oats

2 t. vanilla

1 t. baking powder

1 t. baking soda

1 t. salt

2 t. cinnamon

2 c. shredded zucchini...remove seeds!

1/2 c. sunflower seeds

 

cream together the sugar, eggs, oil, applesauce and vanilla.

mix dry ingrediants together, add to the creamed mixture and beat

add grated zucchini

stir in nuts

 

Pour into two greased and floured loaf pans

or as I did...a bundt pan
